I truly love having a social get together with friends. Especially the kind of gathering where you get to try out new culinary skills. Or at least pretend like you have culinary skills! The kind of skills that are needed to turn Pinterest into real life…..! {Sometimes it’s all about the presentation, a perfect white dish and colorful food can be all you need!}
Pretty food does make my heart sing! This recipe caught my eye when I was browsing the recent issue of Cuisine at Home. When we decided to host our first contributor get together I had to give this recipe a try! And, it was delish! It has even inspired my own play on the recipe to change the stone fruit to a melon mix!
A Summer Waldorf Salad
{Sweet enough for dessert!}
Ingredients :: Salad
2 cups of pitted plums
2 cups of pitted peaches
2 cups of pitted cherries
1 cup of sliced celery
1/2 cup of slivered almonds
1/2 cup finely chopped fresh mint

Chop fruit, gently toss with chopped celery, almonds and mint. Add a dollop of the dressing recipe on top!
Ingredients :: Dressing
1 container of plain Greek yogurt {like oikos} about 1 cup
2 tbsp. fresh squeezed lime juice about 1 lime
1 tbsp. honey
zest of about 1 lime

Empty container of yogurt in small bowl, squeeze and add lime juice, add a little zest and honey, then mix.

A Refreshing Summer Mocktail
{Turn it into a cocktail, it was perfect over ice, or add a little rum or white wine!}
Ingredients :: Summer Strawberry Mint Limeade
Squeeze about 7 limes
4-7 tbsp. sugar {or your sweetener preference!}
A handful of fresh mint leaves pressed in lime juice
Finely sliced strawberries about 6-8
64 oz. of cold water

Add all ingredients to a pitcher except water and strawberries, dissolve sugar as much as possible and smash mint leaves to release some natural juice. Add water and sliced strawberries. Pour over ice and enjoy!
For a little mommy attitude adjustment add a little rum and turn it into a summer mojito. Or pour with your favorite white wine and enjoy a citrus mint sangria!
